Seabass Tagine

Today I went to the markets for the first time to pick up ingredients for a Moroccan tagine I saw on Pinterest. I’ve never liked food markets and being dragged there by mama as a kid was torture! But believe it or not, today it was all very exciting; handing over only £1 for each bowl of fruit or vegetable – I’m still amazed at how cheap it is, it’s brilliant! Anyway the Pinterest recipe didn’t go so well and I ended up going with the flow and making up my own. It’s simple but filled with flavour for all you seafood lovers! I hope you enjoy it.

Ingredients

  • 2 tomatoes
  • 1 cup of Coriander
  • 1 cup Parsley
  • 3 cloves of garlic
  • 2 Green peppers
  • 2 Red peppers
  • 1 onion
  • 1 lemon (½ for step 1 – ½ for step 4)
  • Handful Olives (step four)
  • Olive oil (step four)

Seasonings

  • ½ tablespoon salt
  • ½ tablespoon Chilli powder
  • ½ teaspoon black pepper
  • ¼ teaspoon turmeric powder
  • (Smell the spices in your cupboard and dash in whatever you fancy)

What to do

  1. Cut and combine all ingredients and seasonings together and blend in the blender.
  2. Wash fish and using a sharp knife, score the fish on each side in diagonal lines, 1cm deep.
  3. Marinate the fish with mixture and drizzle olive oil on top.
  4. Get creative and decorate your tagine!
  5. Preheat oven to 180°C. Cover with foil and cook for 30-45 minutes.
